How we use it in the kitchen
At the restaurant it ends up on the antipasto board. At home, cut it into not-too-thin slices and serve with schiacciata, preserves in oil or fresh pecorino.
Producer and origin
Tuscany, from small producers chosen by our kitchen.
Ingredients
Pork, pork fat, salt, pepper, garlic. May contain wine.
Allergens
No declarable allergens in the traditional recipe. If wine is used, it contains sulphites.
Storage
Vacuum-packed: store in a cool, dry place, ideally in the fridge. Once opened, wrap the salume in food paper, keep it in the fridge and eat it within a few days. Serve at room temperature: take it out of the fridge 20 minutes before.
Complete the dinner
Goes well with: Fresh pecorino, fig jam, Tuscan bread.
