How we use it in the kitchen
In shavings with chestnut honey or fig jam, or grated over pici instead of parmesan when you want a more rustic flavour.

Sheep's milk, rennet, salt.

Storage
In the fridge (4-8 °C), wrapped in food paper. Take it out 30 minutes before serving. Once cut, eat within 2-3 weeks.
Complete the dinner
Goes well with: Chestnut honey, fig jam, pears, Tuscan bread.
